ORANGE RECIPES

 

Orange-Lemon Orange Rough

1 Tablespoon olive oil

4 (4 oz.) fillets orange roughy

1 orange, juiced

1 lemon, juiced

1/2 teaspoon lemon pepper

 

Heat oil in a large skillet over medium-high heat. Arrange fillets in the skillet and drizzle with orange and lemon juice. Sprinkle with lemon pepper. Cook for 5 minutes or until fish is easily flaked with a fork.

 

Orange Buttermilk Pancakes

2 1/4 cups all purpose flour

3 Tablespoons sugar

1 Tablespoon baking powder

1/2 teaspoons salt

2 teaspoons finely shredded orange peel

1 cup orange juice

1 cup buttermilk

1 egg, lightly beaten

2 Tablespoons cooking oil

 

In a large bowl combine dry ingredients including orange peel. In a medium bowl combine juice, buttermilk, egg and oil. Stir juice mixture into dry ingredients until combined but still slightly lumpy.

 

Heat a lightly greased griddle or heavy skillet over medium heat. For each pancake pour about 1/4 cup batter onto griddle. Cook until golden; turn when tops are bubbly and edges are slightly dry.
