CAULIFLOWER RECIPES
Cauliflower au Gratin

1 lb. cauliflower florets
2 Tbs. plus
2 tsp. olive oil
2 Tbs. flour
2 cups skim milk, warm
1/4 tsp. white pepper
1/4 tsp. ground nutmeg
1/4 lb. shredded fat-free cheddar cheese
1/2 cup plain bread crumbs
Preheat oven to 350F. Place cauliflower in a steamer basket over boiling water. Cover saucepan and steam 5 minutes. Arrange cauliflower in a casserole dish and set aside. Heat oil in saucepan over medium heat. Add flour and cook 2 minutes, stirring constantly. Very gradually whisk in milk. Season with salt, pepper and nutmeg. Cook 5-7 minutes, whisking frequently or until sauce thickens and is smooth. Pour sauce over cauliflower. Sprinkle with cheese and breadcrumbs and bake 15 minutes or until top is lightly browned.
